- 1 cup non-dairy milk such as almond, soy, or oat milk
- 1 tablespoon apple cider vinegar

- 2 cups all-purpose flour

Instructions:
Preheat your oven to 350F 175C
Grease a 9x5-inch loaf pan
In a small bowl, mix the non-dairy milk and apple cider vinegar
Let it sit for a few minutes to curdle, creating vegan buttermilk
In a large mixing bowl, combine the mashed bananas, melted coconut oil, maple syrup, and vanilla extract
Mix well
Add the vegan buttermilk to the banana mixture and stir until combined
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon if using
Gradually add the dry ingredients to the wet ingredients, stirring until just combined
Be careful not to overmix
