Vegan Buttermilk Banana Bread



This vegan banana bread with buttermilk is moist and tasty, and it's great for breakfast or as a snack. Using ripe bananas, vegan buttermilk, and warm spices together makes a tasty treat that everyone will love.

Ingredients:

  • 1 cup non-dairy milk such as almond, soy, or oat milk
  • 1 tablespoon apple cider vinegar
  • 3 ripe bananas, mashed
  • 1/2 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon optional

Instructions:

Preheat your oven to 350F 175C

Grease a 9x5-inch loaf pan

In a small bowl, mix the non-dairy milk and apple cider vinegar

Let it sit for a few minutes to curdle, creating vegan buttermilk

In a large mixing bowl, combine the mashed bananas, melted coconut oil, maple syrup, and vanilla extract

Mix well

Add the vegan buttermilk to the banana mixture and stir until combined

In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon if using

Gradually add the dry ingredients to the wet ingredients, stirring until just combined

Be careful not to overmix

Pour the batter into the prepared loaf pan and smooth the top with a spatula

Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean

Allow the banana bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing
