Ingredients:
- 1 block tofu, pressed and cubed
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 cup mixed sprouts such as mung bean sprouts, alfalfa sprouts, etc
- 8 small tortillas, warmed
- Toppings: diced tomatoes, shredded lettuce, avocado slices, salsa, etc
Instructions:
In a bowl, toss the cubed tofu with olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper until evenly coated
Heat a skillet over medium heat and add the seasoned tofu
Cook until golden brown and crispy, about 5-7 minutes, stirring occasionally
Remove tofu from the skillet and set aside
In the same skillet, add the mixed sprouts and saut for 2-3 minutes until slightly wilted
Warm the tortillas in a dry skillet or microwave
Assemble the tacos by filling each tortilla with the cooked tofu, sauted sprouts, and desired toppings
