Ingredients:
- 4 large red bell peppers, halved and seeds removed
- 1 pound ground beef
- 1 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can 14
- 5 ounces diced tomatoes, drained
- 1 cup shredded mozzarella cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese optional
Instructions:
Fry the onion and garlic until they are small
Add the diced tomatoes and mozzarella cheese to a large bowl
Add salt and pepper to taste
Place half of a red pepper inside the other half
Put the stuffed peppers in the crock pot
Put the lid on top and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the peppers are soft and the filling is done
If you want, you can sprinkle grated Parmesan cheese over the stuffed peppers before serving
