Slow Cooker Stuffed Red Peppers



These Slow Cooker Stuffed Red Peppers are filled with a savory mixture of ground beef, rice, cheese, and spices, creating a satisfying and flavorful meal. The slow cooker method allows the flavors to meld together perfectly while keeping the peppers tender.

Ingredients:

  • 4 large red bell peppers, halved and seeds removed
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can 14
  • 5 ounces diced tomatoes, drained
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese optional

Instructions:

Fry the onion and garlic until they are small

Add the diced tomatoes and mozzarella cheese to a large bowl

Add salt and pepper to taste

Place half of a red pepper inside the other half

Put the stuffed peppers in the crock pot

Put the lid on top and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the peppers are soft and the filling is done

If you want, you can sprinkle grated Parmesan cheese over the stuffed peppers before serving
